There's a proverb that tells us: 'Why don't you speak as you eat?'—that is, why don't you speak simply? By reversing this concept, we've discovered that cooking is a unique characteristic of the human species. No animal, in fact, retrieves basic foods and composes them into an enormous variety of dishes. In Italy alone, we have more than 5,000 specific preparations. Genes, cuisine, and languages travel together, giving rise to the linguistic and culinary kaleidoscope we find around the world. Meat is a fundamental food: in Mediterranean cuisine, the origin of the Mediterranean diet, it is fundamental. From the beginning, hunter-gatherers included it in their diet. Meat has always been part of the Mediterranean diet, with conscious consumption, but it cannot be excluded from this heritage of humanity.
